Did you know how to unmap element in TemplaVoila? This is easy.
In the mapping interface click "Ch. mode" button. Select empty value in the selector box with types and submit. You will see that value is not mapped any more.
However there is a 
bug in the implementation. If content element field is not mapped initially, it will not appear in page module. However if you map and unmap it, it still will be there. May be there is a good thing about it: at least contents of this field is not lost.
